MIss K's West African Peanut soup (gluten and dairy free)..
2tbsp peanut oil1 lrg diced yellow onion
3 cloves garlic
1/2tsp red pepper
2tbsp grated ginger
28oz can diced tomatos
4 cups broth
1 c. peanut butter
2 cups baby spinach or kale
crushed peanuts
Heat oil add garlic, onion, redpepper flakes, and ginger until tender, add tomatos and broth, add PB until it disolves, add greens cook til wilted add pinch red pepper. I used crunchy PB or you can put crushed peanuts on top. I used baby kale and would double it like Miss K told me last night :) You can add shrimp or chicken but I loved it veggie style
