Lunch today - Delishh.


I made a version of this for lunch.  I used a couple of tablespoons of Trader Joe's guacamole, no cilantro (I would have if I had it!!) and put the egg salad in a romaine lettuce leaf to eat it.  It was SOOO GOOD!!!  Another great recipe from Sandy (@wrighthealthcentre). 

AVOCADO EGG SALAD

Ingredients
1/2 medium avocado
1 tablespoon olive oil
1 tablespoon cilantro, chopped
1 green onion, sliced
2 hard boiled eggs, peeled and diced
salt and pepper to taste
2 or 3 romaine lettuce leaves (optional)
2-4 plain rice cakes or brown rice tortilla

Peel and chop two cooled hard boiled eggs. Put chopped eggs in a small bowl. Chop 1/2 an avocado and add it to the eggs. Add olive oil, cilantro, green onion, sea salt and pepper. Mix all ingredients together. Spread onto rice cakes or a brown rice tortilla. Add some lettuce and enjoy!
